10-Minute Meals with These Co-op Recipes

We've partnered with Co-op to help students across Scotland with budgeting for food, and saving some time by sharing some simple low-cost recipes you can whip up in just ten minutes!

1. 10-Minute Breakfast

Orange, dark chocolate and muesli yogurt bowl


  • 1 x orange
  • 10g x dark chocolate square
  • 65g Fage Total 0% Fat Greek Yogurt
  • 60g Co-op own label muesli


  1. Peel the orange and cut into segments
  2. Chop the dark chocolate square into small pieces
  3. Add in Fage yogurt, muesli, orange segments and chocolate into a bowl then serve

2. 10-Minute Lunch

New york deli pastrami sandwich


  • 1 rye bloomer, or other bread of your choice
  • 1 tsp mustard
  • 2 slices Co-op pastrami beef
  • 2 thin slices Swiss cheese, or other hard cheese
  • 1 ripe tomato, thinly sliced
  • Lettuce leaves
  • 2 tsp mayonnaise
  • To serve, crisps of your choice (optional)


  1. Cut 2 slices from the bloomer, or bread of your choice, and spread a little mustard over one slice
  2. Top with the pastrami beef, Swiss cheese or other hard cheese, tomato slices and a few lettuce leaves
  3. Spread a thin layer of mayonnaise on the other slice of bread and put on top of the sandwich
  4. Cut in half and serve with crisps, if you like

3. 10-Minute Dessert

Summer ice cream sundae


  • 135g pack strawberry jelly, made according to the pack instructions
  • 8 scoops Co-op Irresistible clotted cream vanilla ice cream
  • 400g mixed summer berries (we used strawberries, raspberries and blueberries), chopped
  • 4 Co-op Irresistible meringue nests, crushed
  • 40g chopped roasted hazelnuts
  • Squirty cream and Co-op strawberry sauce, to serve


  1. Roughly chop the jelly and put half in the bottom of four tall glasses
  2. Add a scoop of vanilla ice cream, a handful of berries, some crushed meringue and some chopped nuts to each
  3. Repeat with another scoop of ice cream and another layer of berries, meringue and nuts
  4. Finish with the squirty cream and strawberry sauce, if you like
